I first saw these crispy fish fillets on the noodle soup of my brother when we had breakfast at Ngan Lung at Kowloon, Hong Kong. All of us were of the opinion that these were milkfish fillets. Our waiter denied that the fillets were from milkfish but our suspicion was confirmed when we were at Ocean Park later that afternoon. At the Grand Aquarium, there was a tank full of milkfish.
